White Bean Chicken Chili with Charred Peppers

A layered chili built on charred peppers and slow-simmered beans. Slightly smoky, slightly creamy, balanced.

Ingredients

  • 1 lbboneless, skinless chicken thighs
  • 2 cans (15 oz each)cannellini or great northern beans, drained
  • 2bell peppers red and yellow
  • 2jalapeños
  • 1yellow onion, diced
  • 4 clovesgarlic, minced
  • 4 cupschicken stock
  • 2 tspground cumin
  • 1 tspdried oregano
  • 2 tbspolive oil
  • salt, pepper

Steps

  1. 01

    Char peppers and jalapeños. Chop.

  2. 02

    Brown chicken. Set aside.

  3. 03

    Sauté onion and garlic.

  4. 04

    Add spices, beans, stock, and peppers.

  5. 05

    Return chicken to the pot. Simmer.

  6. 06

    Adjust seasoning. Serve.
