White Bean Chicken Chili with Charred Peppers

A layered chili built on charred peppers and slow-simmered beans. Slightly smoky, slightly creamy, balanced.
Ingredients
- 1 lbboneless, skinless chicken thighs
- 2 cans (15 oz each)cannellini or great northern beans, drained
- 2bell peppers red and yellow
- 2jalapeños
- 1yellow onion, diced
- 4 clovesgarlic, minced
- 4 cupschicken stock
- 2 tspground cumin
- 1 tspdried oregano
- 2 tbspolive oil
- salt, pepper
Steps

Char peppers and jalapeños. Chop.

Brown chicken. Set aside.

Sauté onion and garlic.

Add spices, beans, stock, and peppers.

Return chicken to the pot. Simmer.
