Texan Veggie Chicken Lentil Soup

Ground chicken, lentils, and vegetables given enough time to actually develop. Filling without being heavy.
Ingredients
- 2 tbspolive oil
- 1 lbground chicken
- 1yellow onion, diced
- 2carrots, diced
- 2celery stalks, diced
- 4 clovesgarlic, minced
- 2 tspground cumin
- 1 tspchili powder
- 1 tspsmoked paprika
- 1 cupgreen or brown lentils, rinsed
- 1 can (14.5 oz)fire-roasted diced tomatoes
- 6 cupschicken broth
- salt, pepper
Steps

Heat olive oil. Cook onion, carrot, and celery until softened.

Add garlic and spices. Stir until fragrant.

Add ground chicken and brown.

Stir in lentils, tomatoes, and broth.

Bring to a simmer. Cook until lentils are tender.

Adjust seasoning. Serve.
