Sun-Dried Tomato Pesto Pasta with Caprese Chicken

Roasted chicken and tomatoes over pasta in a silky sun-dried tomato sauce. The pasta water does the work.
Ingredients
- 1 lbboneless, skinless chicken thighs
- 1 pintcherry tomatoes
- 8 ozfresh mozzarella, torn
- 10 ozpasta rigatoni or penne
- 1/2 cupsun-dried tomato pesto
- 3 tbspunsalted butter
- 2 tbspolive oil
- 2 tbspbalsamic vinegar
- fresh basil leaves
- salt, pepper
Steps

Roast chicken and tomatoes until caramelized.

Cook pasta. Reserve pasta water.

Warm pesto in a pan with butter.

Add pasta water to loosen into a sauce.

Toss pasta in the sauce.

Top with chicken, tomatoes, and mozzarella.
